Kunafa is a favorite dessert during Ramadan, but traditional recipes are high in calories, which may lead to weight gain if consumed excessively. A healthier version preserves the delicious taste while being calorie-friendly.

How to make healthy Kunafa:

Step 1: Prepare the Kunafa

  • Freeze the Kunafa until solid, then chop it finely in a blender.

  • Add one tablespoon of butter for every quarter kilo of Kunafa and mix well.

  • Lightly toast the Kunafa over medium heat until golden.

Step 2: Prepare the Mango

  • Cut mangoes into small cubes and set aside.

Step 3: Make the Healthy Cream

  • Soak a bag of chickpeas overnight, then boil until cooked.

  • Keep the cooking water, let it cool, then add 1 tsp vanilla and 3 tbsp stevia.

  • Whip with an electric mixer for 10 minutes until it reaches a creamy texture without added calories.

Step 4: Assemble the Kunafa

  • Place a layer of toasted Kunafa, followed by mango pieces and healthy cream.

  • Repeat the layers, finishing with a Kunafa layer on top.

This method delivers a taste very close to traditional Kunafa but with far fewer calories, perfect for those maintaining a healthy diet during Ramadan.
