A recent scientific study suggests that it is possible to significantly reduce the amount of oil absorbed by fried potatoes while maintaining their desirable crispy texture by using an innovative technique that combines traditional frying with microwave heating.
Researchers from the University of Illinois Urbana-Champaign explained that conventional frying causes potatoes to absorb oil as water evaporates from within, creating microscopic voids that allow fat to penetrate the food.
However, introducing a microwave heating stage before or during frying changes the heating pattern by warming the potatoes from the inside out. This alters moisture loss behavior and reduces the formation of voids that typically allow oil absorption.
Early experimental results showed promising outcomes, including reduced oil uptake, faster cooking times, and quicker internal moisture loss.
Nevertheless, the researchers emphasized that using microwaves alone does not produce the desired crispiness, resulting instead in a softer texture. Therefore, combining both methods appears to be the optimal approach to balance taste and nutritional value.
The lead researcher noted that the goal is to achieve fried foods with lower fat content without compromising flavor, especially as interest in healthier eating habits continues to grow.
This innovation may pave the way for new cooking methods that could be applied on an industrial scale in the future, enabling the production of healthier fried foods that meet consumer demand for both taste and nutrition.
